I don't like the taste of cilantro alone, but it is good mixed into a salad or in salsa. I think of it as a citrus-like taste.

As for the veggies, I don't think of corn as easy. Too many worms to deal with, which causes stunted ears. Peppers can also be tricky if you get one of the diseases which cause the leaves to yellow--kills the whole plant and is pretty common ( bacterial leaf spot, wilt and phytophthora blight ).

I find potatoes, carrots, onions, green beans and jelly-bean tomatoes to be great for beginners.

If you're growing cilantro, try using it to make white-sauce pizza (a little off-topic).
For survivalist means, it also helps keep food fresh when you are preserving it with salt. Do a meat dip with 1/10th part cilantro and it will retain a lot more texture and taste.
